4 cups dry cottage cheese
2⁄3 cup sour cream
1⁄2 cup butter
1 tsp salt
1-1⁄2 tsp baking powder
cheddar cheese or Cheese Whiz
With hands, mix together dry cottage cheese, butter, and baking powder, like pie dough. Let stand for 2 hours (it will become transparent).
In a double boiler, bring to a boil over low heat. Add sour cream, salt, and enough cheddar or Cheese Whiz to colour, stirring constantly until it becomes stringy and smooth. Cook for 45 minutes.
Place in casserole or molds and let stand overnight. Store in refrigerator. Almost like Velveeta cheese.
