Honey-Glazed Ham

6 lb country-style ham
whole cloves
2 tbsp honey
3 tbsp brown sugar­

Put ham in a large bowl, cover with water and let soak overnight. Drain ham, place in a large saucepan, and cover with fresh water. Bring to a boil. Remove any scum. Reduce heat, cover, and simmer for 1 & 1⁄2 hours.

Preheat oven to 350°F. Remove ham from pan, allow to cool slightly, then cut off any rind. Score fat in a lattice pattern and put a clove in the centre of each “diamond”.

Gently heat brown sugar and honey in a small saucepan until melted. Brush over the surface of the ham.

Put ham in roasting pan and cook for 30 minutes, basting occasionally, taking care not to let glaze burn.
