Aunt Rachel’s Apple Pudding

1 cup flour
1 cup finely chopped tart apple
2 tbsp butter
1⁄4 cup brown sugar

1 tbsp baking powder pinch nutmeg
1⁄4 tsp salt butter
1 tsp sugar
1⁄2 cup milk

Sauce:
1⁄2 cup sugar
pinch salt
3 tbsp butter, separated
1 cup boiling water

Combine flour, butter, baking powder, salt, sugar, and milk and make a rich biscuit dough. Roll out dough rather thin. Spread apple overtop, sprinkle with brown sugar and nutmeg, then dot with small bits of butter.

Roll up like a jellyroll and cut in 1-inch slices. Lay flat in baking dish. In a saucepan, combine sugar, 1 tbsp butter, and salt. Gradually add boiling water. Stir until thickened then stir in 2 tbsp butter.

Pour over pudding and bake at 375° until golden brown. Serve hot.
