1-1⁄2 – 2 cups cornmeal
4 cups water
1⁄2 tsp salt
1⁄2 pound cooked, diced bacon
2 – 3 medium onions, diced and fried
2 – 3 cups shredded cheddar or mozza cheese
In a two-quart saucepan, cook water and salt and slowly add cornmeal. Stir with a whisk to prevent lumps. Cook for a few minutes until thick, but not stiff.
Rinse an ovenproof bowl with water then pour a half-inch of cornmeal mixture on bottom. Sprinkle some bacon, onions, and 1⁄4 cup of cheese and continue layering about 4 to 5 layers, ending with cheese.
Bake upside down at 350° for 20-30 minutes. Let set 10 minutes.
Serve with sour cream.
