Black Bean Brownies

From our January 2014 issue

1 15-1⁄2 ounce can black beans
4 eggs
2 tbsp olive oil
1 tsp vanilla extract
3⁄4 cup sugar
3 heaping tbsp cocoa
1 tsp baking powder
1⁄4 tsp salt
walnut or pecan pieces

Preheat oven to 350°. Drain and rinse black beans. Mist an 8 x 8 baking pan with cooking spray. In food processor or blender, combine ingredients except nuts and process until smooth. Scrape batter evenly into the pan. Top with walnut or pecan pieces. Bake for 25 to 30 minutes or until a toothpick inserted in centre comes out clean.
