Beet Cake

From our January 2014 issue

2 cups flour
1⁄4 cup 100% bran
1⁄4 cup wheat germ
2 cups brown sugar
2 tsp cinnamon
1 tsp salt
5 eggs, lightly beaten
1-1⁄2 cups oil
3 cups grated beets and carrots
1-1⁄2 cups finely chopped walnuts
1-1⁄2 cups raisins or dates
1 cup coconut
2 tsp baking soda

Line a 9 x 13 pan with buttered wax paper. Preheat oven to 350°. Combine flour through salt, mixing until sugar lumps are gone. Add eggs, oil, and vegetables. Then mix in walnuts, raisins, and coconut. Mix in baking soda last, pour into lined pan, and put in oven right away. Bake at 350° for 45 minutes, then reduce heat to 300° and bake for another 20 minutes. To improve flavour, age cake for 1 week.
