Auntie Gilda’s Bannock

Ingredients:

  • 5 cups of flour
  • 2 tbsp of baking powder salt
  • 2-1⁄2 cups warm water
  • 3 tbsp cooking oil

Preheat oven 350°F. Put flour in a large bowl. Make a well in the flour and add remaining ingredients. Mix from the centre to the edges. Knead until it is no longer sticky, then roll out dough 3⁄4-inch thick. Prick dough with fork many times all over. Bake on cookie sheet for 20 minutes.

Take out of oven and remove dough from cookie sheet. Brush off any excess flour on both sides of dough. Flip dough over and bake in oven on oven rack for 10 minutes. Flip dough over again and bake for 5 more minutes for a total baking time of 35 minutes. Slightly cool, then cut bannock into individual pieces. Delicious warm with butter and home preserves.
